Cupcakes with puff

Ingredients
# For the dough:
1 cup water
1/2 cup sunflower oil
pinch of salt
1 cup flour
2 eggs + 1 egg for egg wash
# For the filling of pies:
100 g feta cheese
100 g melted cheese or feta cheese
handful of spinach
seeds for sprinkling

Method
In a saucepan put the oil, water and salt to boil. Pour the flour all at once in the boiling water and stir vigorously until you get an elastic and homogeneous dough ball. Allow the dough to cool and add one by one egg beating with a mixer with stirring for severe test. Do not put more eggs for eclairs. The dough should be harder than what you prepare for eclairs. On floured countertop thoroughly pour one heaped tablespoon of dough. Sprinkle flour over the dough and hands gently forming a thin circle. Place the rolled out dough on the bottom of a buttered form of cupcakes. On it arrange filling products: thin plate feta cheese, spinach (raw or milled) and finally cover with strips of cheese or processed cheese. Sprinkle with spices to taste. Cover the filling with another circle of dough, brush with a little beaten egg, sprinkle with seeds of your choice. Bake in preheated oven at 180C until the dough is inflated and acquire a nice golden color.

Yes dough is very nice and can be modeled to us and we like them cold. For stuffing can be experimented on me personally most like to have cheese in it!
