Candy Carrot

Ingredients
1 kg carrots
500 g sugar
500 g coconut
2 vanilla
zest of 1 lemon

Method
Clean and finely grated carrot grater with sugar, vanilla and lemon zest put in a suitable container on the stove. Boil until liquid evaporates released. Add half of the coconut and take away from the heat. Once the mixture cool a bit, form balls the size of walnuts and rolled in coconut rest.

are wonderful! Do not do them for the first time. I, however, only brew carrots, strain off them nice puree them and then add other products (including oil). Are very tasty and anyone who has tried them can not know that these are candy carrot :)
