Ingredients
1 cup red lentils
1 red pepper
1 yellow pepper
2 potatoes
1 carrot
2-3 scallions
1 handful chopped fresh parsley
Himalayan salt
4-5 tbsp olive oil
in 1/3 tsp turmeric, dry ginger, cumin and coriander
3 cloves garlic
5 tbsp Arabiata sauce (hot), or other tomato sauce with some added chili

Method
Saute in a pan in olive oil chopped into small cubes of potatoes, carrots and white part of green onions. Himalayan salt and add water to cover the vegetables and allow to boil for 5-10 minutes. Add the washed lentils, chopped peppers and green part of the onion and the pressed garlic cloves. Add more water and bring to a boil while the lentils is almost ready. Stir occasionally and if necessary refill less water. Finally, add the spices, hot tomato sauce and parsley. Leave for about 5 minutes to boil.
