Banitsi yeast

500 g filo pastry sheets
4 eggs at room temperature
1 tbsp sugar
200 g feta cheese
400 g yogurt at room temperature
7 g dry yeast
2 tbsp equal flour
sunflower oil
baking paper

In a bowl put yogurt, flour, sugar and dry yeast and mix gently. Leave the mixture for 5-6 minutes and to it add the beaten eggs with a fork and in small pieces crumbled feta cheese. Pour the oil in a bowl to make you more comfortable. Each peel coat very lightly here and there with sunflower oil and put in 2-3 tbsp of the mixture as uniformly apply spread sheet. Fold the left and right side of the sheet so as to meet in the middle, then curl tight roll your banitsi. This dose banitsi collected just in the tray of the oven, so I zastelete with baking paper and arrange it rolls. When all banitsi prepared and arranged, with the rest of them smear the mixture on top. If you wish, you can put here and there pieces of butter. Leave them for 10 minutes until warm oven. Bake at 180C degrees until receiving a golden tan. These banitsi yeast are extremely delicious, soft and fluffy. Serve them with a cup of yogurt for breakfast.
