Carrot sponge cake

Ingredients
175 g brown or white sugar
175 ml sunflower oil
3 eggs
3 carrots (grated)
100 g raisins
rind of 1 orange
175 g flour with bulking
1 tsp baking soda
cinnamon
nutmeg (grated)
crushed walnuts optional
# For glaze:
175 g of powdered sugar
1-2 tbsp orange juice

Method
Sugar is poured into a large bowl (brown sugar gives a special scent) poured the oil and put the eggs (if broken down into a fluffy mass mixer and cake becomes fluffy). Stir with a fork. Pour carrots, raisins and orange peel (the walnuts) and mix. Mix the flour with the spices and baking soda and sift to the remaining mixture. Mix ingredients to poluchavaneteo homogeneous mixture. The mixture gets very soft, almost liquid. Pour the contents into a greased and floured pan advance, if you can use baking paper. Bake at moderate temperature (150-160S) for about 40-45minuti. After removing from the oven let it cool for about 5 minutes, then turn it over. Beat the ingredients for the glaze until a little liquid courage and marbled cake. * For me personally the oil recipe I thought a lot, so it slowed and the result was juicy fluffy cake and orange couplet can be replaced by lemon. * This cake is ideal for people with intolerance to milk.

innkart, how oil put? Better put, the amount that you successfully used directly in products :)

put about half. The recipe I wrote it such as it is, can someone not like more oil, in general I am no fan of fatty foods ...

I never tried recipes with carrots, but I sound and look delicious! Interesting proposal, with walnuts seems to me the more delicious it is!

In the threads in my recipe 600g grated carrots, violet buckwheat flour 1 to the first white to definitely add spice ground cloves and icing is mascarpone with orange zest and icing sugar

it is true that the more carrots - more aromatic. I recently put a pumpkin.

I made a cake without nutmeg and orange peel, and became great. Raisins soak them in rum extract for half an hour with a little hot water. Actually already the second time I do the cake in this recipe, the first portion is eaten very quickly. Top spread with strawberry jam. Thanks for the delicious recipe.
