Cold asparagus with sauce of mushrooms

Ingredients
500 g asparagus
20 g butter
1 tbsp (10 g) flour
1/2 cup (100 ml) chicken broth
100 g mushrooms
2 tbsp cream
nutmeg
garlic
lemon juice
salt
pepper
2 yolks
Method
Asparagus is cleared, boil in salted water and then drain is allowed to cool. Of the butter and flour make a light roux. Make chicken broth, add stewed in butter, finely chopped mushrooms and cream. Season with a little lemon juice, nutmeg, garlic, salt and pepper. Add the beaten egg yolks and leave to cool. The sauce is served chilled to, well drained asparagus.
