Fried zander in sweet and sour sauce

Ingredients
400 g fillet of zander
40 g starch
1 egg
3 tbsp soy sauce
2 tbsp cognac
1 small onion
1 stalk green onion
1 tbsp ginger
40 g sugar
20 g vinegar
40 ml broth
salt
Method
Fish fillet cut into strips. Immersed in a mixture of egg white and half the starch mixed with a little lukewarm water. Fry in a highly preheated oil. Boil the mixture of brandy, vinegar, starch rest, away with water, broth, salt, sugar, ginger, green onions cut into pieces and chopped onion. Prepared mixture is poured into a pan with hot oil and stew to thicken, stirring continuously. Fish back in the pan with the sauce and stir well.
