Ingredients
5 tbsp jam blueberries
8 biscuits
250 g feta cheese Mascarpone
2 egg whites
2 tbsp caster sugar
15 pistachios
rind of 1 lemon
2 tbsp lemon juice
Method
Biscuits crushed in small pieces mix with blueberries and distributed in cocktail glasses. Whites and powdered sugar is broken down into hard snow. Mascarpone stir for a minute and to this was added zest and lemon juice. Egg whites are added to the resulting mixture while stirring carefully. The cream is spread over biscuits and decorated with crushed pistachios. Dessert is served chilled.
