Ingredients
8 eggs
200 g canned tuna in sunflower oil
1 clove garlic
1/2 onion
pepper
20 g butter
# butter sauce:
60 g butter
parsley
lemon juice
salt
Method
Canned tuna is allowed to drain from the oil, milled, mix with crushed garlic, chopped onion and pepper mixture and fry in butter. The butter mix until blanching, add finely chopped parsley, salt and lemon juice. A quarter of the oil sauce melted in a pan, add 2 beaten eggs, a quarter of the fish mixture and fry omelet. Similarly are prepared the other three omelet. Serve immediately.
