Salad of couscous with tomatoes and cucumber

Ingredients
250 ml boiling water
1 and 1/2 tbsp olive oil
200 g couscous
12 cocktail tomatoes
1 cucumber
2 green onions
2 and 1 / 2 tbsp lemon juice

Method
Wash tomatoes and cut into halves or quarters. Cucumber is peeled, washed, cut into 4 pieces in length and thin slices transversely. Chop finely. In a bowl, mix boiling water and olive oil. Add couscous, put up and stir well, then cover. Leave for 5 minutes, to swell. With a fork stir cous put up. Adding the remaining products. Mix everything well. Serve with chicken meatballs.
