Tower of eggplant a la Thoreau

Ingredients
2 eggplants
mozzarella
400 g tomatoes
3-4 cloves garlic
1 tsp dry basil
1 tsp dried oregano
150 ml red wine
flour
2 eggs
breadcrumbs
black pepper
1 tbsp sugar
salt
fresh basil for decoration

Method
Eggplants sliced, allowed to drain from the bitter juice. Then rolled in succession in flour, egg and breadcrumbs and fried. Breaded washers rank in the pan, put on each circle of tomato and a slice of mozzarella and baked in a moderate oven. Fry chopped garlic, put the remaining tomatoes - diced and peeled - wine and green spices and boil until tomatoes soften. Season with salt, pepper and sugar. Tier turret of eggplant washers, remove pour the sauce and garnish with fresh basil.
