Ingredients
250 g potatoes
200 g beetroot
50 g sweetcorn
100 g cheese
lemon juice
sunflower oil or olive oil

Method
Peel the potatoes cut into cubes and boil in salted water. Drain and leave to cool. Mix with grated raw beets and sweet corn. Add salt, lemon juice and sunflower oil. Sprinkle top with grated cheese.
