Chicken schnitzel with walnut crust

Ingredients
4 chicken fillets
4 tbsp flour
2 eggs
1 tbsp medium hot mustard
100 g chopped hazelnuts, walnuts or almonds of your choice
4 tbsp butter
2 tbsp olive oil
150 g mozzarella (marbles)
2 tbsp finely chopped fresh onion
2 tbsp parsley or basil
white pepper
# For garnish:
lettuce
2 tbsp dry sherry
2 tbsp balsamic vinegar
2 tbsp sunflower sunflower oil
Method
Chicken cleaned, washed, seasoned with salt and white pepper and rolled in flour. Eggs are broken foam, add the mustard, stir well and chicken strips are dipped and sprinkled on all sides with hazelnuts.
