Cutlets with cauliflower sauce of melted cheese

1 kg cauliflower
2 eggs
3-4 slices of baguette
1/3 cup milk
1/2 cup flour
optional herbs and garlic
sunflower oil for frying
# For the sauce:
1 cup milk
200-250 g processed cheese
pepper or nutmeg optional
1 tbsp lemon juice

Cauliflower is divided into clusters, washed and boiled for 5-7 minutes in salted water. Remove and minced meat finely with a knife. Separate the egg whites from the yolks. The yolks are added to cauliflower and sprinkle with pepper. Remove the crust from bread slices and they are dipped in a little milk, then squeeze out and add the cauliflower. Optional can be put finely chopped herbs and garlic. Add flour, mix and finally add the beaten egg whites of the turbid. Gently stir the mixture. A tablespoon is taken from the mixture and fry the chops on both sides in the heated sunflower oil over medium heat. When serving pour sauce of processed cheese. Sauce: In the boiling milk put a bit of processed cheese. Stir until the feta cheese blur (melted) in milk. For a sharp taste of the sauce can be added pepper, or pinch nutmeg and 1 tbsp lemon juice. This time I substituted the flour with wheat bran and wheat germ. And I added 1 tablespoon sunflower seeds. In no sauce added the lemon juice and sprinkled with finely chopped cucumbers. It was a very good combination.
