Dough crackers Blue Ginger

14 g of dry yeast
and 2 1/2 cups water
6 and 1/2 cup flour
1 cup extra virgin olive oil
2 tbsp finely chopped garlic
2 tbsp coarse salt
1 tsp black peppercorns
1 tbsp coriander seeds, cumin and fennel seeds

Using a mortar and pestle grind cumin, fennel, coriander and pepper . Mix them in a medium bowl. In a large bowl put yeast, cold water, flour, olive oil, garlic and salt. If using a mixer, switch to low speed. Knead dough until smooth and does not tear when it stretching. It takes about 15 minutes. Add spices and knead another 10-12 minutes until evenly distributed. If you plan to use the dough immediately, cover the bowl with plastic foil and leave to rise until doubled in volume. It takes about 1 hour. If not using immediately, store it in the refrigerator or freezer. You can use the dough for crackers and pizza.

Thank you Rosset! I looked at the recipe, but not save it all. Now look like this, I missed a lot :). Well now calm will try :)

Very tasty crackers, done very quickly. With the dough and tortillas made with mushrooms and onions.
