Fried rice cakes

Ingredients
300 g rice
1 liter milk
100 g sugar
2 eggs
120 g coconut
100 g of raisins (can without them)
100 g flour
200 ml olive oil
salt
Method
Put the milk to a boil with the sugar and a pinch of salt. After the boil, add the rice, cleaned and washed, 100 g of coconut and raisins previously soaked in warm water and drained. A stirred well and cook over low heat until the rice absorb all the milk, stirring often to not burn. Then remove from heat and let cool well. Add eggs one at a time and mix nice. Well greased baking sheet and pour the rice mixture on it. Form a square with 3 cm thickness. Leave it to cool completely. Cut into small diamonds around 4-5 cm and roll each one in flour. Fry in a pan with plenty of olive oil until the turn pink from all sides. Leave to drain on kitchen paper and sprinkle them with the remaining coconut.
