Ingredients
400 g raspberries - fresh or compote
1 cup fresh raspberry juice
1 cup water
50 g sugar
15 g gelatin
80 g cream
50 g sugar cream

Method
From ripe, healthy and fresh raspberries Makes raspberry juice. To it add water and sugar dissolved in a little boiling water gelatine. Stirring until the sugar is completely dissolved and pour over the raspberries, pre-arranged soaked in cold water bowls that let cold until firm jelly. Then turn jelly bowls on plates and decorate with shattered sugar cream.
