Ingredients
500 g plucks (kidney, liver, heart, sweetbreads)
150 g lamb brain
10 mushrooms
salt
pepper
parsley
60 g butter
vinegar
Method
Brain soak in acidified with vinegar water for 1-2 hours. Giblets are finely chopped and fry in heated butter, add the cleaned and sliced mushrooms and peeled brain, cut into large cubes. Add salt mixture and fry for ten minutes, sprinkle with parsley and black pepper, is distributed into bowls and serve.
