Ingredients
10-15 ripe tomatoes
2 cloves garlic
1 tsp sugar
1 tbsp fresh thyme (basil, parsley)
1/4 cup olive oil
salt, pepper

Method
Tomatoes halve and arrange with the skin down on a baking paper. Sprinkle with crushed garlic, finely chopped thyme (can be replaced with fresh basil or parsley optional), salt, pepper and sugar.
