Selda with sour cream

Ingredients
4 Selden
3/4 cup (150 ml) milk
1 cup (200 ml) white wine
2 tbsp (20 ml) vinegar
1 onion
1 clove garlic
1/2 tsp mustard
2 yolks
2 tbsp sour cream
1 tbsp (10 g) red pepper
6 zrana pepper
thyme
1/2 bay leaf
parsley
salt
Method
Selden flooded with milk and leave to soak for one hour. Strain, rinse, boil for 7 minutes in the wine and vinegar with the chopped onion, garlic, spices and a little water. Strain again and the product is allowed to drain. Place in a container in which mixed the egg yolks, cream, paprika and mustard. Cool, decorate with parsley and serve.
