Zucchini stuffed with vegetables

Ingredients
1,5 - 2 kg; zucchini
3 tbsp (60 ml) vegetable oil
2-3 (150 g) carrots
1 bunch parsley
1 handful (250 g) green beans
2 (100 g) tomatoes
500 g yogurt
1/2 cup (100 g) rice
pepper
salt
Method
Courgettes are scraped and dug potatoes with a knife, then add salt. In fat sauté all vegetables chopped. Add rice, pepper and parsley. Add salt mixture, stir and distributed courgettes. Filled zucchini arrange in a greased baking dish with butter, pour a little hot water and bake. Serve with yogurt. To vegetables can be added hollowed core of courgettes.

This dish is one of my favorites, but instead of yogurt, bake them with cheese and are amazing.

And you may add the minced meat.

This is lean meat and very tasty. The idea with cheese is very good.
