Nettle Soup

Ingredients
2-3 handfuls (250 g) nettle
3 tbsp (30 ml) vegetable oil
1 bunch spring onions
1 tbsp (10 g) flour
1/4 cup (50 g) rice
1 cup (200 g) yogurt
1 egg
parsley
pepper
lemon juice
salt

Method
Finely chopped onion stew in the oil until soft, then add it to the flour and chopped nettles. By zasushena nettles, add 5 cups hot water and salt to taste. When the water boils, add the rice. The soup boil until ready. Remove from heat, thicken with egg and yoghurt and season to taste with crushed black pepper and lemon juice. Before serving sprinkle with chopped parsley.

The soup is very easy and very tasty but also very useful if you do not know contains a lot of iron. Thank you.

Besides rice can be added and some potatoes and a broth will enhance the flavor.

Classic. Nothing more.
