Bern Mayor dish

Ingredients
1 veal shank
40 g lard
meat broth
flour
1 tbsp (10 g) potato flour
pepper
salt
Method
Salt and pepper to add some veal shanks in flour , fry from all sides in preheated lard, pour a little meat broth and stew until soft. When the meat is tender, remove and cut into portions, the sauce is thickened with potato flour mixed into 1 tablespoon water, and boil 2 minutes.
