Blini

Ingredients
650 g flour
500 ml milk
25 g yeast
25 g butter
100 ml cream
2 eggs
2 tbsp flour
1 tbsp salt
fat frying

Method
Mix the yeast with warm milk half flour and warm butter, and the mixture was refluxed for 30 minutes. In two separate buy separate egg yolks from the whites. Yolks mixed with sugar and stir until completely dissolved. Cream mix with mixer until light and fluffy and to it add the beaten egg whites. Stir the milk mixture, adding the remaining flour, salt and the egg yolks with the sugar and stirred to a smooth mixture. Add egg whites and cream with and again razsheetkva taking care not lumps. The dough is allowed to rise again. Pour chirpak with a thin layer of the mixture in an oily blini pan and fry on both sides as pancakes. * Can be trimmed to taste and traditional trimmings are: Meat Stuffing: Fry 1 chopped onion, add to it 500 g minced meat and salt and fry until ready. Add meat stock, so that the mixture to be juicy, but not liquid. Put it a bit of filling in center of each pancake, folded like an envelope and fry again until golden brown on both sides. Filling of cottage cheese: Mix 300 g cottage cheese with 2 tbsp sugar until the cottage cheese becomes cream. Add 2 egg yolks 2 tbsp sour cream, 1 tbsp lemon zest. Put it a bit of filling in center of each pancake, folded like an envelope and fry again until golden brown on both sides.
