Cream Caramel without milk

Ingredients
7 yolks 1 whole egg +
250 g sugar
1 tsp zest
50 g of sugar to caramelize
Method
Put in a suitable container 50 g sugar to caramelized with 1 tbsp water. Surround the spillage it in mono cakes or cream caramel, turning them so that they become stuck on the walls. Put in another court 250 g sugar with 1/3 cup water and lemon rind. Allow to boil until a thick syrup slightly. Allow to cool. Beat the egg yolks and egg and add a thin stream and stir the syrup as gently with a spoon. Surround the spillage trays and bake in a water bath in the oven heated to 150 C for about 20 minutes.
