Fried clams in a spicy sauce

Ingredients
40-60 sea scallops
1 cup wine vinegar
2 tbsp salt
vegetable oil
2 yolks
2 pinches of grated lemon peel
lemon juice
1 tbsp strong wine
4 black peppercorns
1/2 bay leaf
2-3 cloves garlic
parsley
1 onion

Method
Once scraped, washed mussels with a brush of the leak ing water and boiled for 5 minutes in boiling marinade 2 cups water, vinegar, salt, pepper, bay leaf, onion, cut into 4 pieces, and garlic cloves. Remove the shells and mussels marinated 30 minutes in lemon juice, half wine, 2 tsp vegetable oil and parsley. Pickled mussels are immersed in a mixture of egg yolks, lemon zest, a little lemon juice, remaining wine and salt and fry in heated fat of vegetable oil. Remove paid on a sieve to drain the fat.

Fried clams are a great delicacy! I also breaded them with a mixture of flour and eggs. I guess thus prepared mussels will become very spicy. You might consider the broth and then be used - for the preparation of sauce to complement mussels or a nice fish soup and seafood.

I often do mussels thus, a great appetizer to have beer.
