Marinated boar with salo

Ingredients
1 kg boar
50 g salo
1/4 cup (50 g) flour
1 tbsp (10 ml) wine
1 tbsp (10 ml) vinegar
1 onion
meat broth
parsley
peppercorns
lovage
mustard
salt
sauce "Uorchastar"
# Marinade:
1/4 cup (50 ml) vinegar
wine
piece of carrot
piece of celery
1/2 root parsley
1 onion
2 bay leaf
black pepper
juniper
thyme
1 cloves
piece of lemon peel
Method
Good cleaning meat having a few days in the marinade. The meat is removed, add the vegetables from the marinade, spices, a little water and some of the marinade, add salt and stew.
