Pork stew with dried apricots

Ingredients
1 kg pork loin
2 green peppers
1 cup chicken broth
100 g of dried apricots
500 g yogurt
50 g butter
2 onions
pepper
salt
Method
Apricots soaked the night in cold water. The next day, drain, dry and if they are larger, cut into strips. The butter is melted in a pan and lightly fry it finely chopped onion. Add pork fillet, washed, dried, and cut into small pieces. The mixture was fried for 3 minutes while stirring. Add the cleaned and cut into julienne peppers, chicken broth and dried apricots. Dish to the boil and stew 20 minutes at low heat uncovered by occasionally stirring. Add half of the whipped yogurt, black pepper and salt to taste and everything is warmed once more, without leaving boil. Just before serving the dish mix with the rest yogurt. Optional can be sprinkled with fresh herbs of your choice.
