Pumpkin cake with bourbon

Ingredients
2 cups flour
2 tsp baking powder
1 tsp bicarbonate of soda
1 tsp salt
1-2 tsp cinnamon
and 1 1/2 cups sugar
1 cup sunflower oil
4 large eggs
1 and 3/4 cup mashed cooked pumpkin
1/4 cup bourbon or other aromatic alcohol
powdered sugar for sprinkling optional
Method
Preheat the oven to 180C degrees. Grease a round cake pan or baking dish - about 2.5 liters volume. In a small bowl, combine flour, baking powder, baking soda, salt and cinnamon. In a large bowl, beat the sugar, the oil, eggs and pumpkin until a uniform mixture. Pour the bourbon. Mix dry and liquid ingredients and mix well. With a plastic spatula, transfer the dough to the baking form. Bake for 45-50 minutes, until a toothpick inserted into the cake comes out clean. Remove the cake from the form, having previously run your knife along the edges. Optional sprinkle with powdered sugar.
