Ingredients
4 steak 150-200 g of tenderloin or ham
2 tbsp pork lard
8 onions
4 eggs
40 g butter
pepper
salt
1/3 hours. h. red wine
2 tsp lemon juice
flour
Method
Chops are crushed on both sides with a wooden mallet and sprinkle with salt and pepper. Fry in heated oil and deducted in a heated vessel. Fry the onions, cut into slices, add salt and subtract with latticed spoon. In the butter fried poached eggs separately and put on the steaks. Sprinkle with a pinch of salt and pepper and put around the onions. In the fat from frying pour the wine, boil, add salt (if necessary) and acidified with lemon juice. Pour sauce over steaks.
