Each of the washed and dried tomatoes cut into slices, but not trimmed to the end. Hard-boiled eggs peel and cut into circles that are salting and put between slices of tomatoes. The appetizer is flooded with a mixture of mayonnaise, mustard and yogurt. Sprinkle with chopped parsley and garnish with sprigs of it.
