1 onion
1 carrot
1 slice celery
80 g butter
flour
2 tbsp ketchup
3/4 cup (150 ml) meat broth
piece of lemon peel
1 sprig parsley

Method
Diced vegetables fried in 60 g butter, add knuckle bones and fry on both sides. Add salt, sprinkle black pepper, add 20 g butter, mixed with flour, ketchup mixed with broth and stew a very low heat about 30 minutes. Ten minutes before the end add thinly sliced ​​lemon rind and parsley. Lemon rind is removed from the dish and it is served in its own sauce.
