Ingredients
600 g veal shank
1 onion
1 carrot
1 slice celery
80 g butter
flour
2 tbsp ketchup
3/4 cup (150 ml) meat broth
piece of lemon peel
1 sprig parsley
pepper
salt

Method
Diced vegetables fried in 60 g butter, add knuckle bones and fry on both sides. Add salt, sprinkle black pepper, add 20 g butter, mixed with flour, ketchup mixed with broth and stew a very low heat about 30 minutes. Ten minutes before the end add thinly sliced lemon rind and parsley. Lemon rind is removed from the dish and it is served in its own sauce.
