Breaded eggplant stuffed with minced meat

Ingredients
4 eggplants
250-300 g minced meat
1 egg
1-2 slices of bread
2 tbsp grated feta cheese
parsley, salt, pepper
rusk or breadcrumbs
1 egg batter
Method
Eggplant peel, carve and cook in salted water. Remove to drain. Prepare a stuffing of minced meat, egg, bread soaked in milk or water, the feta cheese and spices. Fill eggplants and spoon stuffing lightly pressed. Rolled in crushed biscuits and in beaten egg and fry.
