Breton omelet

Ingredients
3 eggs
white part of leeks 1
1/2 onion
4 mushrooms
100 g butter
pepper, salt

Method
Chop the onion and mushrooms into slices. Heat half the butter in a pan and add the leeks, onions and mushrooms, stirring them until tender. Remove from heat and set aside. As cool down the vegetables, add them to the beaten eggs, season with pepper and salt. Slightly mix. Put the remaining piece of butter in the pan and pour the mixture. As the eggs are ready, fold in two and serve while still hot.
