Caramelized vegetables BBQ

1 eggplant
1 zucchini
2 red and green peppers
1 hot pepper (optional)
2 carrot
1 tomato
1 onion
1 lemon
2. tbsp sugar, salt
olive oil

Cut the eggplant into slices, add salt and leave to drain from the bitter juice. Other vegetables also cut into slices. All add salt, sprinkle with sugar and sprinkled with olive oil. Vegetables are allowed to be marinated for about an hour and then baked at BBQ. Pour dressing of olive oil, lemon juice and chopped parsley. These vegetables are suitable for salad (in this case must be chilled in the refrigerator) and a side dish to grilled meats and fish.

I am glad that they have been successful! Recently, quite often you do them, the last time I added a few tablespoons of balsamic vinegar, to get even more intense sweet-sour taste.
