Ingredients
3 kg eggplants
1,7 kg carrots
1,8 kg green peppers
700 g green beans
700 g okra
6 kg of red tomatoes
150 g onion
50 g parsley
750 ml sunflower oil
50 g salt
25 g sugar
Method
Eggplants cut into pieces and fry gently in hot sunflower oil. Carrots cut into rings and fry well. 4 kg of tomatoes with minced meat grinder or shred finely. The peppers are split into two halves lengthwise and cut into pieces. Thus cut are blanched in boiling water for 2-3 minutes and immediately cooled with cold running water. Green beans is cut transversely into pieces and also blanched and cooled. Okra blanched whole. Chop the onion slices and chopped parsley. In a suitable pan pour 300 ml sunflower oil and heat well. It puts the onion and fry until golden. Add minced meat tomatoes and cook until the volume is reduced by half. Put salt and sauce is ready. In each jar was first placed about 250 g sauce, a whole tomato, then 150 g fried eggplants, 100 g fried carrots blanched 100 g pepper, 50 g beans and okra and the top was placed another tomato. In the arrangement of vegetables and put a little parsley. Sterilized for 1 hour.

If you put red pepper instead of green, the taste becomes superb.

Only with green pepper.

Definitely green pepper!
