Orange Cream - boiled

Ingredients
3 oranges
zest of 1/2 orange
6 yolks
2 egg whites
1 and 1/4 cup sugar
1 cup white wine
1 tbsp gelatin
1 tbsp rum
Method
Gelatin soak in 2-3 tbsp cold water to swell. In enameled pot mix the juice of 2 oranges, egg yolks, sugar and grated orange peel. Beat on low heat until heated without fuming. Add soaked gelatine and wine. The mixture was stirred until the gelatin melts and then is withdrawn from the fire. Cooling, add the beaten egg whites. The cream is packed in moist glasses and put in the fridge. Once seeded serving garnish each serving with sliced ​​orange and the third sprinkle with a few drops of rum.
