Pickle halibut with honey

Ingredients
5 kg peppers bell peppers
2 kg cauliflower
1 kg carrots
1 bunch celery leaves
500 g sugar
250 g salt
1.2 l vinegar
2 tbsp honey
Method
Bell cut into julienne carrots into slices and cauliflower is broken into florets. All vegetables and chopped celery leaves mix, sprinkle with salt and sugar and stir well. Leave to stand overnight. Good morning drain and vegetables are filled into jars. To the pressed juice was added vinegar and honey and put to boil. Allow to cool and pour jars filled with vegetables. Sterilize only 1 minute and immediately cooled. The quantities are for 12 compote jar type of Omnia 800

I apologize so I izrazila- *immediately cooled.* Under cooling I had contingencies that the jars are removed from the hot water. I draw them on hold pad, turn them with the caps down and when they stand up well cool. Caps are deep, which means that they are under vacuum.

Now I remembered that when I make jam, turn the finished jars in the pot in which there is little water, and only *weld* caps.Whether it can be applied here, a kind of *vacuum*?

I have heard of such a mode of *welding*, but I have not done it. I guess that will happen.
