Risotto with brain

Ingredients
1 calf brain
350 g veal
bovine bone marrow
350 g rice
40 g butter
700 ml broth
50 g feta cheese "parmesan" or "Emmental"
1 onion
1 sprig parsley
saffron
pepper
salt
Method
The brain washed in salted water, remove skin and immerse in salted water. Finely chopped onion fry in a pan to yellowing, add chopped parsley, chopped into small pieces and beef marrow and fry. Add the rice, broth, salt to taste and stew. When the rice and meat are almost ready, add the chopped brain and stew. Just before serving put saffron, pepper and grated feta cheese.
