Roasted potatoes with lemon

Ingredients
2 kg potatoes
4 tbsp butter
1/3 cup chicken broth
1 tbsp oregano, salt, pepper, black pepper, dried parsley
3 cloves garlic
2 lemons
parsley
Method
Peel the potatoes, leave the smaller potatoes purposes and larger cut in halves (even three ). In a deep dish zest of lemons, and then express and juice. Add the butter melted, a pinch of black pepper, salt, oregano and grated garlic. Add the broth and mix well. Arrange the potatoes in the pan and pour the mixture. Sprinkle with salt, parsley and paprika. Bake in the oven until the turn pink. Serve sprinkled with parsley.

It seems to me that lemon juice should not be put at the beginning.Because it will *stiffen* the potatoes.
