Ingredients
400 g of beef
125 g smoked salo
2-3 leeks
250 g carrots
2 eggplants
150 g celery
50 g mushrooms
salt
paprika
300 g potato puree
30 g butter
2 tbsp (20 g) breadcrumbs
Method
Meat and vegetables (without eggplants) are passed through a meat grinder and seasoned well with salt and pepper. Eggplants are scalded with boiling water and peel. Mashed potatoes pour into well oiled form (best earthen vessel). Spread the puree on the ground mixture and cover with shredded eggplant. Top put strips smoked salo, sprinkle with breadcrumbs on which are placed pieces of butter. Serve stew moderate oven until ready.
