Ingredients
3 tbsp butter
4 tbsp flour
1/2 cup milk
1/2 cup chicken broth
salt, pepper, parsley
3 eggs
1 and 1/2 cup choppy chopped boiled or roast chicken
little bread crumbs and flour for rolling
sunflower oil for frying
Method
Warming the butter with the flour, stirring. Add milk and broth. When boiling add spices, 1 egg + 1 egg yolk and chicken. Stir well and leave in the fridge for about 15 minutes. Beat 1 egg, 1 white and 1 tbsp sunflower oil. Shape croquettes with desired size, roll them in flour, then in egg and finally in breadcrumbs. Fry in heated sunflower oil until browned.
