Chitterlings with liver

800 g black pork liver
1 kg pig intestines
4 onions
2 carrots
1 cup rice
4 eggs
4 tbsp yogurt
3 tbsp flour
pepper pikantina or other seasoning of your choice
First intestines and the liver is put for an hour or two to soak separately in vinegar and water. Intestines are put to neck for 15 minutes with a few grains of black pepper and 2 bay leaves, the same liver. After removing them cut into small cubes with onion and carrot, you can add red pepper and spices of your choice. Put pan in sunflower oil (fat), enough to fill the bottom. Put all cut products in it and place in the oven. Bake for 20 minutes and add the rice, pour with water and baked for 10 minutes. Finally makes dressing as moussaka (mix the eggs with the yogurt and flour) and bake until topping is browned.
