Ingredients
2 eggplants
1 large carrot
4-5 pickles
100 g feta cheese (from softer)
50 g cheese
flour and salt for frying
spices of your choice

Method
Cut eggplants into slices and add salt them to drain their bitterness. Then, it all deep them in flour and salt and fry in heated sunflower oil until golden. Put them on a napkin to take unnecessary sunflower oil. During this time, sliced carrots and pickles strips. Take eggplant, put on the cheese (I'm abroad and here is called Robiola - unsalted is very soft), put two strips of carrot, cucumber and 2 roll (I put them on a skewer for easy removal from the pan). Sprinkle with grated cheese, savory (optional) and bake 15 minutes at 250 C.

I liked the idea, and who does not like eggplant, you can replace them with zucchini or peppers.
