Fruit croquettes

Ingredients
60 g of melon
40 g pear
120 g Canned pineapple
60 g sugar
10 ml brandy or rum
10 g flour
10 g potato flour
60 ml milk
50 g butter
1 yolk
40 g walnuts
vanilla

Method
Fruits are cut into small pieces, bombarded with sugar, pour in brandy. The mixture is covered with a lid and leave to cool for 8-10 hours. The flour is mixed with starch and with a little of cold milk. Pour the mixture plume in the remainder of boiling milk and boil to thicken. Cool. The butter is mixed with the rest of the sugar and egg yolk. Gradually add milk mixture with vanilla and mix of fluffy cream. The fruits are joined with cream. The mixture was cooled, partitioned into balls. Each ball is in add some chopped walnuts. Arrange on a platter pyramid.
