Ingredients
1 1/2 cups quinoa
3 cups chicken broth (from cubes can)
1/3 cup dried tomatoes
4 tbsp olive oil
4 tbsp balsamic vinegar 2 tbsp plain or vinegar
1/4 cup chopped olives
1/2 cup pine nuts (or other small nuts)
handful of fresh basil
1/2 cup grated parmesan cheese
2 cloves garlic
salt and pepper

Method
Quinoa is boiled in chicken broth and place in large bowl. Add dried tomatoes, olive oil, vinegar and olives. Mix well and leave to cool. Add and pine nuts, chopped basil, Parmesan and chopped or grated garlic. If need be, seasoned with salt and pepper to taste.
