Salad with cucumber and ginger

1 large cucumber
1 tbsp balsamic vinegar
1 tbsp sunflower oil
1 tsp sugar
1 tsp sesame sunflower oil
1/2 onion
1 clove garlic
1 tsp (equal) minced meat fresh ginger
1/2 tsp salt
2 tbsp roasted sesame
2 tbsp chopped fresh coriander or mint

Vinegar, sugar, the oil and sesame sunflower oil are mixed and stirred so as to melt the sugar. Chop the onion very thin crescent, stir well with the mixture and leave for half - an hour to take the flavor (can at room temperature or in a refrigerator). Garlic is ground together with ginger and the salt are added to the onions and stirred. If the sheet of cucumber is not bitter cucumber only be washed if it was edible - peel. Cut into very thin rings - can a potato peeler. In a bowl mix the cucumber, onion, sesame and mint, mix well and leave on the 20th minute. Then salad stir again, optional part of the separated water is poured (the salad is nice juicy), seasoned with more salt to taste and serve.

Very nice and useful salad, I quite grated ginger and rose slightly bitter but very useful, will be made often.

How many servings average out?

salad of amounts set her break two so that two portions roughly. Although that depends on what is available and how much they eat salad snack :)

Sesame oil can you replace with olive oil?

It is very fragrant, in this case more spice, but not fat, I'm not sure what will happen without it ... If you decide to try, share how they received.
