Stuffed peppers with couscous and vegetables

12 red peppers
2 carrots
1 potato and zucchini
100 g porcini mushrooms or mushrooms
150 g couscous
150 ml tomato juice
2 onions
3 cloves garlic
1 chili pepper
sunflower oil and salt
cumin, black pepper, oregano
parsley and savory

To prepare the stuffing chop into small cubes vegetables (carrots, zucchini, potato, mushrooms, hot pepper, onion and garlic). In a heated pan with sunflower oil fry the onion and garlic. Add the rest of the vegetables. Stew them. Add couscous-Kusa and tomato paste. Season with salt, pepper, cumin, oregano and savory. Replenish with 250 ml water and let it simmer for a bit. Once the mixture is left of fat, pull from the heat and add the chopped parsley. Clean the peppers from the stems and seeds. Salt them from inside. Fill the peppers with the stuffing. Arrange in a pre-greased pan with sunflower oil. Apply peppers filled with sunflower oil Salt and above. Bake at 180C degrees until browned peppers.
