Ingredients
10 apples
50 cloves
2 cup Water
4 cup sugar
1 tbsp nutmeg
1 tbsp ginger
1/2 tsp allspice
2 cinnamon sticks
6 eggs
3 liters of sherry
2 cup brandy
Method
Apples Prick with 5 cloves and put in a baking dish. Pour 1 cup water in the pan and cover with foil. Bake at 190 C in an oven for 1 hour. In a saucepan pour 1 cup water, sugar and spices. Put it on the stove and boil for 5 minutes, then remove from heat and leave to cool. Separate the eggs in a large bowl beat egg whites snow. Separate the yolks slightly broken, put the bowl in egg whites and carefully mix. Little by little added spice syrup into the egg mixture with constant stirring. Transfer the mixture to a serving bowl (if not already in it). In a large saucepan heat the sherry and brandy - should not boil, but must be hot. Add 1 cup by heating wine in the egg mixture and stir well. This was repeated until all of the wine is transferred into the bowl. It is normal to become foam. Baked apples are added just before serving and while the mixture is still foaming.
