Vegan sponge cake with apricot jam

Ingredients
450 g apricot jam or jam
1 cup hot water
1/2 cup sunflower oil
1/2 cup chopped dried apricots
2 tbsp cognac or brandy
zest and juice of half a lemon
2 cup flour
1 and 1/2 tsp baking soda
1/4 tsp salt

Method
Soak apricots in brandy for a few hours. Take 2 tbsp of sweet. Beat remaining jam with hot water, add the oil, grated lemon rind and lemon juice. Mix flour, baking soda and salt. Add dry ingredients to liquid. Mix well and put the soaked apricots. Bake for 30-35 minutes in a preheated oven at 180C degrees with the fan. After switching off the oven leave the cake for 5 minutes in and then remove and let cool completely. sweet mixed separately with 1-2 tbsp hot water and brush the cake. * 1 cup = 250 ml
